Provence is also a land of salt. It calls on generous sunshine, large ponds, Tramontane and Mistral to reveal the white gold. At Salin-de-Giraud in particular, in the south-east of the Rhône delta, in the heart of the Salins du Midi, mountains of salt emerge, known as camelles and salt tables, whose pink deepens in summer.

This young chef’s roots go deep into the West of France. She spent part of her childhood fishing in the Bay of Mont Saint-Michel with her grandfather and cooking with her grandmother. Initially focused on adding value to products, she switched to cooking in Bordeaux alongside Léo Forget. Attracted by Marseille, she decided to settle there and began working alongside Lou Chapuis at L’Idéal before assisting Loïc Tonnoir at Ippon. Today, she’s on the move, offering a cuisine of remarkable sensitivity and strength.

Alexandre Leard was already cooking family lunches when he was very young. It was a 3rd grade internship at the Auberge de l’Ecritoire that sealed his destiny. He joined the Grand Monarque in Chartres, then La Côte d’Or ** in Saulieu, with Bernard Loiseau, and then the Bristol with Éric Fréchon. He then followed Arnaud Bignon to Athens, at the Spondi**, before returning to the Bristol as sous-chef. Next came Le Shangri-la with Philippe Labbé and L’Espadon** at the Ritz. Attracted by the South, Alexandre met Mathias Dandine and joined him in the adventure of La Magdeleine*.
