Antonio Altamura, chef at the Grand Hôtel Nord-Pinus restaurant, discovered Arles in 2022 during a culinary residency at the Drum Café de La Tour, located in the LUMA Arles Parc des Ateliers.
Inspired by the city’s light and the richness of the surrounding region’s terroirs, he returns there regularly, notably to create collaborative four-handed menus with La Chassagnette in 2024.
Having worked in the kitchens of Victor Arguinzoniz, Iñaki Aizpitarte, Giovanni Passerini, and at Marzapane in Rome, he has now chosen to settle at the Nord-Pinus, where he blends his Italian roots with the flavors of the Camargue and Provence.
