Tellinas of the Camargue
Small in size but big in taste, the emblematic shell of the Camargue had almost disappeared. Overfished and poached, the tellina, cousin of the clam, is now subject to regulations which have allowed the return of the shell. Known for its extremely fine flesh, you can find it on the markets and in the restaurants of Camargue.
Oysters of the Camargue
The oysters of Carteau, in Port Saint-Louis du Rhône, have won several awards at agricultural competitions in recent years. Yet, their cultivation was only introduced in 2015. Its success is partly linked to the production area which allows the shell to enjoy the freshwater supply of the Rhône carrying rich nutrients.

Rice of the Camargue
Camargue rice has obtained a indication géographique protégée (IGP) since 2000, which guarantees its provenance. On about 15,000 hectares of rice fields, nearly 60 varieties are grown and harvested in the fall.

AOP bull meat of the Camargue
In 2011, the “Raço di Biòu” bull, which is present in 95 farms in the Camargue, obtained the appellation d’origine protégée (AOP). Its meat is low in fat, rich in omega 3 and omega 6 and excellent for health. This meat quality comes from the grain-free feeding of the animals. The AOP label requires that the animals live in freedom, in the open air and in large areas (1 adult per 1.5 hectares). They walk and seek their food mainly made of grass from the prairies and sansouïres of Camargue. The label also requires grazing in a wetland for at least 6 months of the year.
Grilled, sautéed, skewered, roasted, stewed… enjoy a good piece of meat!
